Once your driver has picked up your shipment and is on the road, you can use the Uber Freight app to track it in real time. How to Sign Up for Uber Freight

Who exactly are the competitors of Uber Freight? This depends on what you mean. In terms of companies competing to provide the same service that Uber Freight does, the main competitor is Convoy.
Convoy is an almost identical service in every respect, including its mobile app for real time tracking of shipments.
